The most popular Father/Son type fic of Severus Snape and Harry Potter, without a doubt, is the famous Severitus Challenge fic! 
You can find the basic rules for such a fic at Severitus' webpage (You'll have to visit it to find out more!)
I call everything else.. Sevitus! 
Sounds kind of like a disease, don't ya think?
If it's only called a 'Severitus' fic because it features Harry and Snape as biological Father and Son but not the rest of the rules, then I may have labeled it as Sevitus. All of the fics listed here will either feature Harry and Severus biologically Father and Son, or Harry raised by Severus since he was a child, making him associate Snape as his father. Basically, if Harry ever calls Snape 'Father' it should be here. I hope that clears some things up.
